ROASTER'S NOTES
Roasting this exceptional Honduran coffee was a true delight. Our goal was to bring out the innate flavors of this micro-lot while preserving its natural complexity. The medium-light City Roast allowed us to achieve just that. During roasting, we carefully coaxed out the graham cracker sweetness, let the caramel notes develop gracefully, and highlighted the bright cherry acidity.
The result?
A harmonious cup that's rich yet refreshingly crisp, perfect for those who appreciate the artistry of single origin specialty grade coffee.
For a lighter roast like this, we've found the best flavors brewing with a pour over or Chemex.
THE DETAILS
In the heart of Copan, Honduras, lies the Cafescor Co-Op, where this captivating micro-lot finds its origins. This cooperative, born in 2014 with 25 small farmers, has blossomed into a community of 131 farmers cultivating coffee across 400 hectares. Nestled in one of Honduras' six primary coffee-growing regions, this micro-lot shines as a testament to the region's potential for excellence.
The journey from plant to green bean is a meticulous one. Coffee cherries are handpicked at their peak ripeness, ensuring the highest quality. After harvesting, they undergo a thorough washing process, where meticulous care is taken to remove any impurities. The beans are then sun-dried, allowing the Honduran sun to infuse them with its unique character.
